These cookies are amazing! With a texture like shortbread and full of dark chocolate and pistachios, how could they be bad? A sprinkle of salt on top really appeals to those of us who like a little salt with our sweets. When we saw these cookies from sallysbakingaddiction, we had to try them. Our verdict? One of the best cookies we'd ever had.
We used unsalted pistachios in our cookies, along with extra-large 60-percent cacao chips instead of bar chocolate, both coarsely chopped. We always prefer to use what we have and adapt recipes to make them easier. Nobody likes to make extra trips to the store or buy ingredients they can only use for one recipe! For the coarse sugar, we used the organic sugar we get in big bags at Costco.
If you'd like to really simplify this recipe, you can make these as drop cookies. We chilled the dough for about an hour, scooped with 1.5 Tablespoon cookie scoop and flattened just a little with our hands. Baked until just golden on the edges, about 12 minutes.
To save a little time and effort, you can eliminate the step of rolling the dough logs in chopped nuts and sugar. It looks pretty in the photos, but we don't think it adds to the flavor or look of the finished product.
