white chocolate macadamia nut cookies

These cookies are thick, soft, buttery and chewy. They're not too sweet, but it's heaven when you get that taste of sweet white chocolate and a bit of salty macadamia nuts. Simply awesome!!

ingredients

  • 1 cup butter, softened
  • 3/4 cup packed light brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup coarsely chopped macadamia nuts
  • 1 cup coarsely chopped white chocolate

Heat oven to 350°F.
  1. Beat sugars, butter, vanilla and eggs in large bowl with electric mixer on medium speed until light and fluffy.
  2. Stir in flour, baking soda and salt until just incorporated. (dough will be stiff).
  3. Stir in white baking chips or bar chunks and nuts.
  4. Refrigerate dough for at least 2 hours or overnight for best results and thicker cookies
  5. Using a 2 Tbsp cookie scoop, drop dough about 2 inches apart onto ungreased cookie sheet, parchment or silicone mat.
  6. Bake 10 to 12 minutes or until light brown.
  7. Cool 5 minutes; remove from cookie sheet to wire rack.
  8. Cookies stay fresh when kept in a sealed container at room temperature for 3 - 4 days, or can be frozen for up to two months.
