Special Occasion Flourless Chocolate Cake

This rich and filling cake is to die for! It takes a while to prepare, so don't expect to bake this on a weeknight. Makes about 8 servings. It is gluten-free.

Ingredients & Special Equipment
  • 22 ounces bittersweet chocolate chips
  • 1 cup butter, room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 5 large eggs
  • 1/2 cup water
  • ​pinch of salt 
  • Springform pan 
  • Double boiler

Recipe
  1. Preheat the oven to 300 degrees F
  2. In your stand mixer, whip eggs and sugar together until they form a "ribbon" consistency (see photo)
  3. Melt chocolate and butter in a double boiler over low to medium heat
  4. Add vanilla and salt
  5. Add the melted ingredients slowly into the egg mixture, mixing on low just until no streaks of egg remain.  
  6. Place a pan filled with water on the bottom rack of your oven (forming a pseudo water bath)
  7. Pour chocolate mixture into a springform pan. Shake pan to even out batter.
  8. Bake for about 50 minutes at 300 degrees. Cake is done when it is set, comes away from the pan edges and does not jiggle. 
  9. Take out of oven and allow to cool completely before serving. Serve with a sprinkle of powdered sugar, a dollop of whipped cream or vanilla ice cream.​

Is it just me, or this cake really looks like a giant crinkle? Based on your post's content, it seems like this one is very easy to bake. Another thing is that, you include the ingredients and the steps on how we can make this recipe. I got interested in your post because of the picture because it really looks yummy. My nephew would really like this because she really likes to eat chocolate cakes, and anything that's chocolate flavored. Your post gave me an idea to surprise him on our next family day this weekend. I will bake some of this for the family and especially for him. I just hope he will like it.
