quick & easy cinnamon swirl pound cake

You have a stand mixer, and it looks really nice on your counter. But who has time to bake anything anymore? You do!

This simple but elegant recipe starts with a boxed pound cake mix. You just doctor it up  a bit and everyone will think you're a baking genius.

We baked ours in a cute fall cakelets baking pan. But you can bake these as muffins or a loaf or an 8 by 8 coffee cake. Simple. Quick. Yummmmm.

ingredients

  • Pound cake mix that makes one normal size loaf plus listed ingredients (usually eggs, oil, milk or some combination)
  • 1 teaspoon vanilla extract
  • 1/3 cup granulated sugar
  • 2 teaspoons cinnamon

instructions

  1. Make the pound cake mix in your stand mixer, fitted with SideSwipe or flat paddle, according to instructions on the box. Add in vanilla. Mix until incorporated. Should look creamy.
  2. In a small bowl, mix together the granulated sugar and cinnamon.
  3. Spray your baking tin or pan with cooking spray that includes flour, or use spray, then dust lightly with flour.
  4. Using a spoon or cookie scoop, put dollops on batter into the tins. Sprinkle heavy amounts of the sugar mixture randomly over the batter. Add more batter in random pattern on top of cinnamon. Continue until both batter and cinnamon are used up.
  5. Bake according to package directions. Remove when golden brown.
  6. Allow to cool in the pan. Remove cake or cakes onto a wire rack to cool completely before serving.
