Planning to grill this weekend? Compound butter (butter with herbs or other flavors blended in) can take grilled corn, steaks, chicken or bread from alright to awesome.

While it's possible to mix these by hand.....why? Use your trusty stand mixer, and your SideSwipe of course, to whip up a bigger batch of deliciousness. Just a few ingredients plus a few minutes and you've got an upgrade to dinner, your next cookout or a cute and tasty hostess gift.

Use any combination of herbs that appeals to you. We used fresh rosemary, chives , thyme and parmesan for our photo. We put the mixture on grilled pork tenderloin and it made it so juicy and flavorful! We also tried it on roasted potatoes. Delish!

Save your compound butters in ramekins, little canning jars, or roll in plastic wrap to make it easy to slice off just what you need. They will keep about a week in the refrigerator and up to three months in the freezer if sealed well.

parmesan-herb butter

  • 1/2 cup (1 stick) salted butter, softened
  • 3 1/2 tablespoons grated Parmesan (we used Parmigiana Reggiano)
  • 1 tablespoon minced chives
  • 2 teaspoons minced thyme
  • 1 teaspoon minced rosemary
  • 1/4 teaspoon cracked black pepper

directions:

  1. Mix in stand mixer until combined.
  2. Put into ramekins, small jar or roll into a log in plastic wrap.
  3. Refrigerate or pop in freezer until cold, 1 hour minimum in the freezer
  4. If rolled into a log, slice into coins and serve. Refrigerate or freeze unused portions.

variations:

Chili-Lime-Cilantro Butter:
1 stick (1/2 cup) of butter, add 2 tsp. chili powder and the finely grated zest of a lime.
Garlic-Herb Butter:
1 stick (1/2 cup) of butter, add 1 finely crushed clove of garlic, and 2 Tbsp. finely chopped fresh herbs, such as rosemary, thyme, sage, basil and parsley – a combination is delicious.
Lemon-Basil Butter: 
1 stick (1/2 cup) of butter, add the finely grated zest of a lemon, juice of half a lemon, and 1 Tbsp. finely chopped fresh basil.
Pesto Butter:
 to 1 stick (1/2 cup) of butter, add 1-2 Tbsp. basil or red pepper pesto.
Black Pepper-Parmesan Butter:
1 stick (1/2 cup) of butter, add 1/4-1/2 cup freshly grated Parmesan cheese and 1 tsp. freshly ground black pepper.
Honey & Blue Cheese Butter:
1 stick (1/2 cup) of butter, add 1/4 cup crumbled blue cheese and 1 Tbsp. honey.
Fruity Butter:
 (great on toast or pancakes) 
2 sticks (1 cup) butter, add 1/4 cup jam or preserves. Can add a pinch of chopped mint or basil it that appeals.
