Even if you're not a coffee fan, we guarantee that you'll love these buttery and crispy little toffee squares. The little toffee chips caramelize in the oven, leaving crisp areas and some voids where the chips melted away. The varying textures and flavors in this cookie make it very special.
You can make this without the coffee flavor, if you so choose. We tried and enjoyed it both ways.
We drizzled ours with chocolate and sprinkled on some toffee chips. We used semi-sweet baking chocolate chips instead of bar chocolate. They contain more wax, but the finish was acceptable if you want to do the same thing. Again, this step is optional. It does elevate these little biscuits to the "special occasion" level for us.

Cookies will stay fresh for a week in an airtight container at room temperature, or in the refrigerator for about 2 weeks. We froze ours for 2 weeks with no loss of flavor or texture.
