Have friends or family coming over for a cookout and don't know what to make for dessert? This cookie offers something for everyone. It has the texture of a peanut butter cookie, but it's loaded with rolled oats, mini semi-sweet chips and red, white and blue candies. What more do we need to say? Yummmmm.

Plus, it's easy to make. This is important as the holiday is in the middle of the week! We put all the ingredients directly into the mixer without combining the dry bits in a separate bowl. Of course, SideSwipe handled it like a champ!

ingredients

  • 1/2 cup butter 
  • 1/2 cup firmly packed brown sugar
  • 1⁄2 cup peanut butter (we about 2 TBS less of natural)
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup app-purpose flour
  • 1⁄2 cup oatmeal (we used rolled oats)
  • 1 teaspoon baking soda
  • 1⁄4 -1/2 teaspoon salt (we did 1/2 because of natural PB)
  • 1 cup mini semi-sweet chocolate chips
  • 1 cup red, white and blue coated chocolate candies

directions

  1. Preheat oven to 350°. Rack should be in center position.
  2. Cream butter, peanut butter and and sugar together. Add egg, and vanilla. Mix until all are well combined and slightly fluffy.
  3. Add dry ingredients and mix until all ingredients are incorporated.
  4. Add chips and candies and mix well.
  5. Roll or scoop 1.5-2 Tablespoons balls. Place onto cookie sheet lined with parchment or a silicone mat.
  6. Optional - chill for 1 hour or overnight (we chilled)
  7. Bake for about 10-12 minutes. Ours took about 13-14 minutes until they turned golden at the edges.
  8. Cool for 5 minutes on sheet, then move to rack to cool completely.
